I’m Carrie and I have a gluten intolerance. For years I had health issues that couldn’t be figured out, bloating, joint pain, anemia, exhaustion… despite me changing many other things – my doctor finally recommended I eliminate gluten from my diet for a month. Within 2 weeks I was feeling better; more energy and less pain. After 6 months my anemia issues were nearly gone.

After all my studying on this topic, some people have to eat gluten free like myself, and others choose to do it for other various health reasons. You don’t have to give up pasta and bread if you enjoy them – you just learn to make them differently!

I’d like to share what I’ve learned – both the good and the bad. I’ve had fantastic meals come out of my kitchen that no one would guess is gluten free and healthy. I’ve also had some stuff turn out straight awful (My first attempt at gluten free angel food comes to mind, wow what a mess!)

I like various cuisine ranging from Indian to Thai to Mexican to American. I like food with flavor. Eating a healthy meal doesn’t need to be bland and boring. Food should be fun, exciting and memorable.

    Looking forward to browsing you recipes! I am not gluten intolerant, but I am trying to cut down on carbs at night. I am also allergic to wheat, so gluten-free is always an option!
