Honey Glazed Carrots

honey glazed carrotsCarrots are so versatile. They go good with so many meals, and make great crunchy snacks. They’re also great for you. This is my sweeter way of serving carrots with dinner – with honey and a bit of cinnamon and nutmeg. They’re easy to make and taste great.

1 lb baby carrots
2 tablespoons butter
1/4 cup honey
1 teaspoon cinnamon
1/4 teaspoon nutmeg
salt, for the water

honeycarrot3In a medium pot bring enough water to cover the carrots to a low boil with a pinch of salt. Cook the carrots until softened, about 10 minutes. Strain the water from the carrots and melt the butter in the pot with the honey. Add in the cinnamon and nutmeg – then add back the carrots. Stir well, cover and cook another 7-10 minutes, stirring occasionally. Enjoy! Serves 4.
