This side dish works well with so many different meals. I’d kept the whole dinner vegetarian for this occasion and these complimented the rest of the meal well. The rosemary and garlic work well with the potatoes and compliment the fresh Parmesan cheese.
Ingredients:
1 pound russet potatoes
2 tablespoons olive oil
1/2 cup fresh grated Parmesan cheese
2 garlic cloves, minced
1 tablespoon rosemary
salt and pepper, to taste
Preheat the oven to 400F. Slice the potatoes into 1/8″ pieces. (No need to peel them.) Place the potatoes in a large bowl along with the olive oil, salt, pepper, garlic and rosemary. Stir and coat all the potatoes with the oil and spices. Lay out the slices onto a baking sheet or two and top with the Parmesan cheese. Place in the oven and bake for 45-50 minutes, they’ll be golden brown and easy to pierce with a fork. Serve warm. Serves 4. Enjoy!
