Apple Pomegranate and Goat Cheese Salad

The base is a mixture of spinach and arugula (I love arugula!) with some crisp apples, pomegranate, rich goat cheese – and a light vinaigrette style dressing. I wish I could get pomegranates year round, I’m so sad when it gets later into spring and they’re gone.

5 ounces fresh baby spinach
5 ounces fresh arugula
2 medium sized red apples, seeded and cored (I used braeburn)
1/3 cup pomegranate seeds
juice of 1/2 a lemon
1/4 cup extra virgin olive oil
2 tablespoons pomegranate balsamic vinegar (regular balsamic is fine)
salt and pepper, to taste
2 ounces goat cheese

pomesalad2In a large bowl place the spinach and arugula. Cut and core the apples into 1/2 inched cubes (leave the skins on).  Add the pomegranate seeds and half of the goat cheese.

For the vinaigrette place the olive oil, lemon, and balsamic vinegar into a small bowl. Add a bit of salt and pepper and mix together well. Slowly add it to the salad, combine well as you go. Top off with the rest of the goat cheese and serve right away.  Serves 3-4 as a main dish, 6-8 as a side dish. Enjoy!
