Cheddar Broccoli Casserole

cheddar broccoli casseroleThe cold weather here continues and I mean… really cold. I wanted to make something simple and warm to fill the bellies and a way to use up all the broccoli I have right now. Broccoli actually belongs to the cabbage family, is full of fiber and low in calories and fat. I think it tastes pretty good by itself and preparing it like this just makes it better.

1 lb broccoli coarsely chopped
2 tablespoons butter
3/4 cup milk
1/4 cup sour cream
1/2 cup shredded cheddar cheese
2 tablespoons gluten free flour
4 tablespoons gluten free bread crumbs
1/4 teaspoon fresh basil
salt and pepper to taste
broccass3Preheat the oven to 375F. In a medium saucepan melt the butter. Add the flour until thickened and add the milk, stirring slowly. Cook together until warmed and add the cheese and sour cream. Mix until the cheese is melted and add the broccoli, basil, salt and pepper. Stir in 2 of the tablespoons of the breadcrumbs and mix well.

Place the mixture in a 9×9 or 1 quart baking dish. Sprinkle the remaining 2 tablespoons of breadcrumbs on top and place into the oven. Bake for 10-15 minutes.

Serves 3-4. Enjoy!

      Yum! I’d actually thought about it with cauliflower first but didn’t want to make a run to the store!
