I made a simple dessert with just a few ingredients. This has no extra sugar, is lower on calories but still offers a sweet treat that’s great after a heavy dinner. The coconut and pear together really have a great taste, and goes well with an after dinner coffee or tea.
Over medium heat, place all the ingredients into a medium sized pot. Bring to a boil and stirring occasionally keep at a boil for 10 minutes. Reduce heat and simmer for another 20-25 minutes and let thicken.
Carefully pour into a blender and mix until everything is smooth, place into a dish and put into the refrigerator until set.
