I made this as a side dish to my Greek Marinated Chicken last night – and the contrast was great! It’s a nice creamy side with some spice for when you want that extra kick.
1 large head cauliflower, cut into florets
1 cup monterey jack cheese, shredded
1/2 teaspoon cumin
1 tablespoon salt
3 tablespoons fresh cilantro
In a medium sized pot, add the salt and cauliflower and bring to a boil. Cook until soft and drain. Place in a food processor and blend together until smooth. Add the cumin, cheese and cilantro and blend together. Serve right away – feeds 4 as a side.
