Tonight for dinner I made this Greek inspired marinaded chicken and a cumin cauliflower mash. Lots of great flavor that doesn’t take much time at all, which is great on a busy night. I chose to bake the chicken, however this would easily go on the grill. The chicken came out very juicy and tender – with just the right amount of spice.
2 pounds of chicken (whichever pieces you prefer)
1 cup plain greek yogurt
2 garlic cloves, minced
1/2 of a lemon, juiced
1 teaspoon oregano
3 tablespoons parsley
1/2 teaspoon salt
1/2 teaspoon pepper
In a medium sized bowl, mix together the yogurt and lemon juice. Stir well and then add the garlic, salt, pepper, oregano, and parsley. Stir until blended. Place the chicken into a large freezer bag and add the marinade. Gently massage the marinade into the chicken and place into the fridge (I left mine for an hour).
Preheat oven to 375F and arrange the chicken pieces in a large baking dish. Bake for 50 minutes until 1 hour, they’ll be starting to brown on top and smell delicious!
