Pumpkin Chili

chili4It’s that time of year when we’re all craving pumpkin. So hey, why not add it to chili for something a little different? It really gave the chili a very creamy texture, and came out quite mild so everyone will enjoy. This is also my first vegetarian chili – and I’m very pleased with how it came out.

1 15 oz can pumpkin
1 15 oz can diced tomatoes, with their juice
1 15 oz can cannellini beans, drained and rinsed
1 medium onion, diced
1 green pepper, chopped
1 yellow pepper, chopped
2 tablespoons olive oil
2 cloves garlic, diced
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
2 teaspoons chili powder
1/2 cup water

Optional:  green onions for garnish

chili2Place the olive oil in a large skillet over medium heat until it starts to shimmer. Add the diced onions, peppers, garlic, chili pepper, cayenne, salt and pepper. Cook together for about 5 minutes.

In the crock pot on low heat, add the tomatoes, beans, pumpkin, and water. Stir up just a bit and add the onion and pepper mixture. Blend together and place the lid on top. Let it sit and simmer for 4-6 hours. Before serving, add some sliced green onion, shredded cheese or sour cream.  I like cheddar and green onions on top! Serves 4 adults. \

chili3Feel free to add a bit more water if it’s still a bit thick for your taste.  Prep time was about 10 minutes – great meal to put together at the start of a busy day for a hearty meal later.
