Roasted Green Beans with Red Pepper

 

beans2With so many green beans coming from the garden still, I wanted an easy and tasty way to serve them up. It takes just a few minutes to prepare then off in the oven so I can focus on preparing other parts of dinner.

beans1Ingredients:
1 pound green beans, trimmed –  fresh or frozen work
1 red bell pepper, chopped
2 tablespoons extra virgin olive oil
1 glove of garlic, minced
1 teaspoon salt
1/2 teaspoon pepper

Preheat oven to 425F, and lay your green beans and pepper out on a baking sheet. Cover with the olive oil, garlic, salt and pepper and combine together. After 10 minutes of cooking time, give it a couple of stirs and cook for another 10 minutes. Should be slightly caramelized and crisp.

    We love green beans and I’m always looking for new ways to cook them. Although I’m usually not a big red pepper fan, I made this last night and it was delicious! Thanks again for another simple and delicious recipe!
