Yesterday we went out for Mexican food for dinner. The only time I don’t cook is the occasional visit to a restaurant. We’ve been there before, and food has been good, but last night I think I confused them asking about their special – I don’t think he understood when I was asking about gluten because it didn’t take long after we got home that I got sick. So after a fun filled night of my body being angry about the gluten – I needed a comforting breakfast and these were perfect.
Ingredients:
1 cup all purpose gluten free flour
1/2 cup carrots, finely shredded
1/2 cup walnut pieces
1/2 cup milk
2 teaspoons baking soda
2 teaspoons baking powder
1 egg
Whisk together the egg and milk and slowly add in the flour, baking soda, and baking powder. Combine until the batter is smooth. Fold in the carrots and walnuts. Put just a bit of olive oil in a large skillet over medium high heat. Carefully add the batter into the pan, into whatever size pancakes you prefer. Cook, flip, serve, and enjoy! Will make enough for 2 hungry adults, and this also makes delicious waffles.
I’m not a big pancake eater, but those sound really good. Might have to give them a try.
ugh, i hate when that happens! i hope you are all over the stomach icckkiness now! a few days ago i woke up middle of the night just dying from stomach pain – just couldn’t figure out what i ate to cause it to scream at me! =( these do sound delicious, wish i would have seen them for breakfast this morning!!!
You probably had gluten hiding somewhere too 😦 It ends up in the weirdest places sometimes… Give them a try next time you’re in the mood for pancakes – they really hit the spot and still are pretty healthy!
