Cucumber Lemonade

lemon3I wanted to share a favorite simple and fun drink for the summer. It also uses up some of the garden’s cucumber surplus, which is always good! This takes 5-10 minutes and is ready to enjoy right away.

Ingredients:
1 large cucumber, peeled and sliced
1 large lemon, juiced
6 cups cold water
1/4 cup sugar
1 cup or so of ice cubes to top it off

lemon2Add the cucumber slices and 3 cups of water to a blender and blend together.  Next add the sugar and blend another 2-3 minutes until the sugar is fully dissolved.

Use a mesh strainer (or sieve) and pour the liquid from the blender into a large pitcher or bowl. Add the juice from 1 lemon into the pitcher and if it’s still a bit thick for your liking feel free to it through the strainer again. (I like it fine after one run through.)

Add the last 3 cups of water and a bit of ice if you’re ready to enjoy it right away. It makes just under 1.5 quarts. On a hot day like today was, this was a huge hit and the whole pitcher disappeared as we enjoyed the afternoon outside.

    Never thought to combine lemonade with cucumbers. I may have to try this. Looks easy to make also.
